Select the Right Pineapple

This treat starts with a ripe pineapple. The pineapple needs to be just right, meaning ripe enough, but not overripe. Test it by lifting it by one of its leaves. If the leaf detaches, you’ve found the right one.

Place the pineapple in a flat bottom dish and move on to the marinade. For the marinade, combine one can of coconut milk, half a cup of loosely packed brown sugar, and a pinch of salt in a saucepan. Cook over medium heat, and stir it often. Once the sugar has dissolved, pour the mixture over the pineapples. Keep a little bit in a separate dish for dipping. Cover the pineapples and refrigerate them until you are ready to grill.

Grilling

Push a skewer into each pineapple section and place it on the grill. Be sure you have properly oiled the grill first. Next, grill the fruit pieces for five to 10 minutes on each side. You can baste with the marinade a few times while the pineapples are grilling.
