If you’ve ever eaten Thai food, then you know that the eggplant found in these dishes is a different version than what you’re probably accustomed to seeing and eating. A Thai eggplant or “ma keua praw” is about the size of a golf ball and is a pale to medium green color but can also be purple or other shades. However, what makes it truly unique is its crunchy texture and mild flavor, which make it great for eating raw and without the need for removing the skin.

Thai foodWhile some people prefer eating this fruit raw with spicy dip, it is also used in many other Thai food dishes. Slice them up and add them to red and green curry recipes. They are wonderful at absorbing the flavor and aroma of the other ingredients they are being cooked with.

Another excellent way to use Thai eggplants is by incorporating them into stir-fry dishes, particularly spicy ones. It tastes delicious when combined with meat, garlic, basil, and a curry paste. You could also add it to a Thai salad—which also tends to include minced meat, seafood, and noodles—or feature it in a chili paste.

You can grill, fry, bake, puree, stew, stuff, and even pickle this fruit. It tends to pair best with other nightshade family companions, such as tomatoes, potatoes, and peppers. However, you can easily mix it with ingredients such as garlic, onions, basil, oregano, coconut milk, soy sauce, and ginger to make something tasty.
