Here, they slice up their three favorite ways to top a pizza with zucchini.

Grilled

pizzaToss zucchini with salt and olive oil, then grill it on a covered rack until it’s tender. Brush the grilled pizza dough with oil and garlic, and then sprinkle it with Parmesan and mozzarella. Top it off with grilled zucchini and return the pizza to the grill until the cheese is melted. Grilled zucchini is also a hearty topper on pasta and salads.

Thin Discs

Are you craving pepperoni and looking for a lighter substitute? Try slicing up zucchini into thin discs and coating them in a blend of red pepper flakes and Italian seasoning. Bake about 10 minutes until the cheese is crisp.

Grated

Add a pinch of garlic, sea salt, and pepper. Spread the mixture on pizza dough and bake it for about 10 minutes until the cheese starts to bubble. Try it instead of summer salad.
